St. Patty's Cutie Pie

This creamy, dreamy vegan chocolate tart has got an Irish kick! The rich tones of chocolate and coconut are complimented by the peppery and woodsy hint of Irish whiskey. Always a hit with the sweet toothed party goers at my St. Patty's day parties!





Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 2 hours

*The base and filling can be made a day in advance. Add the whipped topping the day when it will be served and let set another 2 hours before serving.

**This tart is Vegan and Gluten free

Ingredients

The crust:
  • 1 cup almond flour

  • 3 tablespoons cocoa powder

  • 3 tablespoons fine caster sugar

  • 1/4 cup virgin, cold pressed coconut oil, melted

The chocolate filling:
  • 2 large very ripe avocados

  • 1/2 cup cocoa powder

  • 6 tablespoons maple syrup

  • 4 tablespoons Jameson's Irish whiskey

The topping & whipped Icing:
  • 800ml cold full fat coconut milk,( refrigerated )

  • 2 teaspoons maple syrup

  • 1 teaspoon vanilla extract

  • Garnish/ Topping:

  • 1 100- 200 gm vegan chocolate bar ( to make chocolate shavings)

  • 50 gm chopped nuts


Method:

Crust Preparation:
  1. Pre-heat oven to 175°C and grease a 35cm x 10cm rectangular tart tin.

  2. In a small bowl, sift together the almond flour, cocoa and sugar. Add the melted coconut oil and stir until well combined. (The mixture will be wet).

  3. Press the mixture into the bottom of the prepared tart pan and bake for 8-10 minutes, or until the edges start to look crispy.

  4. Remove from oven and let cool completely on a wire rack.

Make the chocolate filling:

  1. In a large mixing bowl, add the avocados, cocoa, maple syrup and whiskey and beat with an electric mixer on low speed until the cocoa is combined and then increase to high speed until the avocado is well blended.

  2. Spread the chocolate filling onto the cooled crust.

Make the whipped topping:

  1. In a large mixing bowl, scoop out the solidified coconut milk. Add the maple syrup and vanilla.

  2. Using an electric mixer, beat on high until the milk is whipped and creamy.

  3. Spread the whipped topping over the chocolate filling.

  4. To make Chocolate shavings, run a sharp knife lengthwise along the chocolate bar to make shavings. Top with shaved chocolate and chopped nuts,

  5. Place the tart in the fridge for 2 hours to set.

  6. Serves 10 slices.
